From Acadian roots to Indigenous influences and ocean harvests, the province offers dishes full of history and flavour.


Here are a few must-try specialties if you live here - or just want to explore our food culture!

Poutine râpée - grated potato dumpling stuffed with salted pork, served hot with sugar or molasses.

Fricot - a hearty stew made with chicken or seafood, vegetables and soft dumplings.

Popular in Clair, Baker-Brook, or served at local events in Kedgwick.

Atlantic lobster - a New Brunswick culinary symbol! Boiled, in rolls, or fresh from the dock.

Available seasonally in Campbellton, Bathurst, and sometimes even in Saint-Quentin.

Bagosse or Acadian donuts - fluffy homemade treats perfect with coffee.

Found in Saint-François, Saint-Hilaire or at local markets in Kedgwick.

Local cider & apples - the true taste of fall!

Apples from the Haut-Madawaska region (Rivière-Verte, Saint-Joseph), and cider at some farmers' markets.
